‘Fire dining’ is based on a philosophy of casual elegance, we serve gastronomy grounded and inspired by the art of grilling over different species of wood with the highest quality of seasonal British produce and combining influences from Japan.
We serve cuisine based on the precision of Japanese cooking techniques, HUMO and Abajo’s cooking combines the finest produce with culinary experimentation.
Smoke and fire
Directly translated as ‘smoke’ in Spanish, HUMO revolves around a centralised four-metre long grill, with no electricity or gas utilised as cooking fuel. All dishes are prepared using a selection of widely sourced woods, all used to cook with and to impart subtle flavour differences to each of the dishes.
Our team have worked closely with the talent in the kitchen, our head sommelier and head of bar, to ensure your palate’s journey is one that values each dish and drink throughout your HUMO and Abajo experience.

A frequency of surprising, innovative and meticulously sourced ingredients to ignite the most intricate flavours. The use of smoke and fire is intertwined into the curation of every dish from small plates and main dishes on the menu. Guests can expect theatrical service with their senses ignited through the production and execution of every dish.

Wine, Sake & Cocktails at HUMO
HUMO has a wide selection of low and no sulphur wines which are also vegan friendly. Aged Burgundy and Bordeaux in particular. Champagne plays a large part in our pairing menu which also includes Sake, signature cocktails along with wine pairings also.
